Apican Spiced Dates
1 bottle Beaujolais
8 medjool dates
16 whole almonds – lightly toasted
¼ cup honey
1 Tbsp. Whole black peppercorns
1 Tbsp. Cloves
1 Tbsp. Grated orange rind
4 whole allspice berries
2 cinnamon sticks
12 bay leaf
¼ cup mascarpone- room temp.
Coarse sea salt
In a med. Saucepan, bring the wine to a simmer. Add the dates and poach until the skins blister, about 5 minutes. Remove dates and carefully remove skins. Cut open the dates, remove pits and place two almonds in the center of each date. Fold closed.
Add the honey, peppercorns, cloves, zest, allspice, cinnamon and bay to the wine and continue simmering until the wine is reduced by half (about 15 minutes). Strain the wine. May be prepared up to this point 2 days ahead. When ready to serve, pour the wine into a saucepan, add the dates and heat gently until warmed through but not too hot. Place a dollop of mascarpone in the center of the plate, spoon 2 dates and a little wine sauce on each plate, then sprinkle lightly with sea salt.
