I got this salad at a friends house and I LOVED it!
I don't have accurate measures, but if you have cooked spaghetti once, you'll manage to make this.
3 chicken filets - cubed
1 bag of fresh spinach - rinse and chop off stalks
1 jar of sundried tomatoes in oil - cut in halves drain off oil
1/2 cup pine nuts - toasted
1 green zucchini - cut in two halves and then sliced.
cumin
coriander spice
garlic powder
indian tandoori spice.
Heat some oil in the pan and add the cubed chicken.
Turn down heat and let it turn brown. Add cumin, coriander spice, a touch of garlic powder and indian tandoori spice. (I don't have accurate measures here but it should be kinda spicy.)
When done, transfer chicken to a bowl and heat som more oil in the pan. Saute zucchini and add salt and pepper to taste.
Add zucchini, sun dried tomatoes and toasted pine nuts to the bowl. Add spinach leaves right before serving. Mix well.
Serve with naan bread.
