sour soup at babyrambutan.com. This recipe was adapted from Saveur, according to the site. I tweaked it, and it was the best Chicken Divan I've ever made. All others that I have ever made or tasted have been flat, boring, and bland.
My tweaks were simple...the grocery store had no boneless skinless chicken thighs, so I bought whole thighs, removed the skin and fat, and browned them well in a large skillet, for about 15 minutes total. After I removed the thighs to cool, I made the roux with butter and flour in the same skillet, and captured the flavor of the yummy caramelized chicken bits. I simply continued to make the sauce in the skillet, then prepared the casserole with the browned thighs on top of the broccoli. Baked until brown and bubbling, and it was a winner! Served with rice, a green salad and bread. A very nice dinner.
PS I think the almonds were a bit too much, and I will leave them out next time.
