Delicious dinner

I went to a friend's house for dinner last night and had the most amazing meal. All the food was local and/or organic. We started with chilled cucumber/yogurt soup with dill; then had a dish of grilled zucchini, leeks, and marinated chicken with tiny fresh tomatoes; then a wild rice salad with salmon on lettuce leaves with a salad of beets and jicama. Dessert was homemade mint ice cream and strawberry sherbet. Drinks were basil lemonade, another type of lemonade, and an herb-infused water (cucumber, mint, and lavender). I feel I want to apprentice myself to her so I can learn to cook like that--I felt so nourished and nurtured after that meal.

 
What a wonderful experience. That is the type of cooking I aspire to but I've never taken it to that

level.

 
It may be as simple as visiting the farmers' market and coming up with one dish from what you find

A whole menu of garden-fresh ingredients, (including 2 homemade ice creams!) is a little intimidating. Your apprenticeship idea is not a bad one.

 
I think I need to rethink how I cook.

I'd love to start incorporating more whole grains and vegetables. The amazing thing about this dinner was that there wasn't a lot of food, but the quality was fantastic. Even my husband, who is a steak and potatoes kind of guy was impressed and said it was fabulous; he didn't leave feeling hungry. Of course, I couldn't produce a meal like that every night, but there has to be a way to get close to that. I just felt so wonderful after it.
