one of the top NYC restaurants was giving advice on turkey cookery. He recommended cooking till the thigh registered 140 to 145 degrees. Did I hear right?

 
Alton Brown did one on a gas grill on the Food Network on Wednesday. He said...

...cook it until the thigh reaches 150 and then remove from the grill. Tent with foil and let rest for 30 minutes and it will continue cooking, and gain 10 to 15 degrees more.
