They hit all the right buttons, they seem the perfect match, they are--simply put--It.

Well, I just had that experience...only it was with a loaf of bread.

I recently made a loaf of oatmeal cheddar jalapeno bread and it was perfection. Tall & golden, with crispy cheese tailings bubbling over the edge of the pan.

As I said--perfection...until I tasted it.

How can I describe the letdown after the first taste? Somehow this wonderful bread with 6 oz of cheddar had no cheesy cheddar flavor. Where did it go? It tasted flat--like it needed salt, which the recipe had, so I have no idea where that seasoning went. It was so dense it actually made the sound "thunk" when I dropped it to pan toast it. THUNK!

No bread should make a sound like that.

So...the upshot is this: do I try another batch and see if I can correct all these issues? More important, do I really need something in my life that thunks?

Not sure if this was the problem, but every oatmeal bread I have ever made started with the oats in a bowl and they had hot/boiling liquid poured over them. They then sat until cool enough to add yeast and other ingredients.

It seems like there wasn't enough liquid, and also maybe that the oats needed time to soften.

A thought about not tasting cheesy enough- did you use really sharp cheddar? I generally buy the Cabot Seriously Sharp or some very long aged cheese.

 
I certainly hope not. Just made the peppermint cheesecake and that was very tasty, so those taste buds were working at least.
