Different kind of Stuffed Red Pepper recipe

4 red peppers, split lengthwise and cleaned

1 lb ground round

1/4 onion, chopped

2 cloves garlic, chopped

6 large mushrooms, chopped,

1 cup fresh spinach, chopped

5 sun dried tomatoes, soaked and chopped

1/2 cup kalamata olives, pitted and chopped

1/2 cup orzo, cooked

1 T oregano

feta cheese

Boil water, add peppers and boil 3 minutes, drain.

Brown ground round. Add garlic, onion, mushrooms and cook for few minutes. Stir in spinach, tomatoes,olives and oregano. Cook until spinach wilts. Remove from heat and stir in orzo. Stuff peppers and bake covered 350º for 30 minutes. Remove foil and top with feta and return to oven briefly to heat up the cheese.

I had bought a big bag of red peppers at Costco and wanted to do a different stuffed pepper and this is what I came up with.

 
Oh this sounds great, Susan. Speaking of Costco, have you seen their gigando bags of spinach?

They're such a good buy but there's no way the 2 of us can use all the spinach, even though we adore the stuff, so we alternate buying the bags with our neighbors and share the wealth around the neighborhood. ;o) Looks like I should try doing that with the bell peppers too. Thanks for the recipe.

 
I love them too, but if you saute about half a bag it

makes about two servings. I find it keeps really well in the bag/box too.

The stuffed pepper recipe looks great. I LOVE red peppers better than green for stuffed peppers. Fortunately our year round farmers' market has nice peppers at great prices.

 
Hey Pat! Would you believe I had a bag of the

spinach in my hand and hubby gave me the "are you nuts" look and I put it back. Especially after I had put 4 lbs of grapes and 5 lbs of carrots in the cart, wouldn't had room for it when I got home anyway.
We have been getting alot of spinach lately, but not that much! I'm getting it next time though, been craving a Joe's special! Or a Joe's special burger for that matter.

 
Oh Susan, I'm cracking up because I too got the "are you nuts" look from my hubby

tonight as he was helping me unpack groceries. Safeway had the 40 oz. size for $3.99. What can I say....I can't help it....LOL.

I should add though that his "are you nuts" look is with a wry smile and feigned roll of the eyes because he knows me too well. I can't seem to pass up a good bargain. ;o)

I just hope my neighbors are ready for some more spinach.
