Digestive biscuits... I know it's an English thing. Anyone know how to make them?

Digestive Biscuits

These are delicious spread with cream cheese and apricot preserves or strawberry etc.

4 cups whole wheat flour
1 cup butter
1 cup dark brown sugar
1 teaspoon baking soda
1 teaspoon cream of tartar
1 Lightly beaten egg
1/2 cup HOT water (as needed)

Cut butter into flour until mixture is like coarse meal. Add all other ingredients, but only enough water to make dough into pastry consistency.

Roll dough on a floured surface till very thin 1/8 inch to 1/4 inch thick. Cut into small rounds depending on what size you prefer.

Bake at 375 degree F. on unoiled baking sheets until golden brown, about 10 to 15 minutes. Cool on rack.

Recipe: Cinnamon Graham Squares

CINNAMON GRAHAM SQUARES

These are crispy and spicy; serve with tea or coffee.

1 1/2 cups whole wheat flour
1 cup unbleached all purpose flour
1/2 cup vegetable shortening, at room temperature
1/3 cup well packed light or dark brown sugar
1/4 cup honey
1/4 cup vegetable oil
3 tablespoons cold water
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
Additional all purpose flour for dusting

Mix all ingredients except additional flour in large bowl until smooth, using wooden spoon. Cover with plastic wrap and refrigerate 20 minutes. Preheat oven to 425 F. remove half the dough from refrigerator and place on ungreased baking sheet. Pat into a smooth 4 to 5 inch square. Dust with additional all purpose flour and roll out on baking sheet to 10 x 12 inch rectangle. Cut into 2-inch squares, leaving dough in place on baking sheet. Prick entire surface with a fork. Bake until golden, 7 to 10 minutes. Repeat with remaining dough. Re-cut while hot if necessary. Cool on baking sheet. Crackers crisp as they cool. Store crackers in airtight containers. Makes about 5 dozen.

Marilyn, I made the KA chip cookie with your cinnamon chips. SOOO good.

This is my new go to basic cookie dough recipe with oatmeal. I made 2 small changes. I used 1/2 shortening for a softer cookie and I pulsed the oatmeal just a few times for a coarser texture. 15 minutes is too long for baking. Maybe 12-13 minutes at most, depending on size of cookie. I think I may add the KA cookbook to my Amazon order.
I made a second batch and added those Hershey kissables---pastel coated mini kisses. They look like springtime, but I don't like the flavor of the chocolate. Must look at the ingredients. Almost tastes artificial.

Good thing they are around just once a year. If I eat milk chocolate, it must be Cadbury.
