RECIPE: Dinner last night, wonderful, quick and easy! REC: Cod with Tomato Cream Sauce

This was completed inside 30 minutes. I love good, hearty dinners that I can make in a flash on the weeknights. Whole Foods had cod on sale for $10.99 lb., so this was a very inexpensive meal as well. From Eating Well Feb 2010.

I did not use the farro but tried whole wheat couscous instead. While this was very tasty the couscous got lost in the tomato sauce. I would recommend something bigger. Maybe pearl couscous, orzo or even white beans. Also, I had some left over broccoli so I stirred it into the tomato sauce with the cream. Voila, a one dish meal!

That's the one I opened up to and it did look good. A very nice site.

The cream tomato recipe is only around 230 calories per serving, not too bad at all for a cream sauce. Thanks Barb!
