Dinner Menu last night for a young couple returning from a six month sabbatical in Italy.

The roast was moist and flavorful, cooked long and slow. The entire meal done ahead of time except for the slicing the roast. Tomatoes were at their peak. The Cabernet was full bodied and excellent and the Port was worth stocking up on. We spent three plus hours at the table enjoying the food and their tales of their travel with two young boys in tow.

Porchetta Pork Roast

Israeli Couscous with Asparagus, Peas and Sugar Snap Peas

Garden Fresh Heirloom Tomatoes, Olive Oil and Shaved Parmesan

Served with Chateau Ste. Michelle, 2006, Cabernet Sauvignon

This looks absolutely wonderful. I've had my eye on the couscous recipe. The grape dessert looks

delicous and so different. Btw, a little confused by 'shaved tomatoes, by chance, do you mean shaved parm?
