There are way too many opportunities to eat while you are making it. The first batch I got 5 jars and the second one I filled 6 jars so I figured I ate a whole freakin' jar while making the first batch.

I checked out your source for chocolate and they beat a lot of others by $40+. But, I just couldn't see getting 22 pounds of chocolate. BJ's had Ghirardelli Double Chocolate Baking Chips - 3 Lbs/$9 and Nestles' Semisweet chips - 4 Lbs/$8. Still very good using Plugra Butter.

2 1/3 cups all-purpose flour
1 1/2 teaspoons salt
3/4 teaspoon baking powder
1/2 cup parmesan cheese -- freshly grated
2 teaspoons black pepper -- freshly ground
2 tablespoons fresh sage -- chopped (the recipe calls for the same amount of rosemary but I thought sage would be good with the soup)
1 1/2 teaspoons dried thyme
1/3 cup pine nuts -- toasted
4 eggs
1/3 cup cold water

Preheat the oven to 350 degrees. Oil a baking sheet.

Combine the flour, salt, baking powder, Parmesan, pepper, sage, thyme and pine nuts in a large bowl. In a separate bowl, whisk together 3 of the eggs with the cold water.

Make a well in the center of the dry ingredients and pour the whisked eggs into the well. Slowly stir the eggs into the flour until combined.

Flour your hands and work surface. Knead the dough until smooth, about 3 minutes, adding additional flour, if necessary. Shape the dough into a 2 1/2 x 8-inch log. Set the log on the oiled baking sheet.

Whisk the remaining egg. Lightly brush over the top of the log to glaze it. Bake until golden brown, about 30 minutes. Lower the oven temperature to 325 degrees.

Let the loaf cool to room temperature on a wire rack. Use a serrated knife to slice the loaf on a diagonal into 1/4-inch-thick slices. Arrange the slices, cut sides down, in a single layer on a baking sheet. Return to the oven and bake until lightly golden and crisp, about 15 minutes.

Cool the biscotti on a rack. Store in an airtight container for up to 2 weeks.
