Peach Crumb Pie
1 cup flour
1/2 cup brown sugar
1/2 cup (1 stick) butter or margarine
1/2 cup chopped walnuts
3 tbsp. cornstarch
1/2 tsp. ground ginger
1/2 cup light corn syrup
4-1/2 cups (about 2 lbs.) peeled, sliced peaches (or nectarines)
Unbaked single crust (9-inch) pie crust
Preheat oven to 375 Degrees F.
Stir together flour and brown sugar. Using two knives, cut in butter until mixture resembles coarse crumbs. Stir in walnuts.
In separate bowl, combine cornstarch and ginger. Stir in corn syrup until smooth. Add peaches and toss until coated.
Spoon peach mixture into pie crust. Sprinkle crumb mixture on top.
Bake in preheated oven 55 minutes or until golden brown.
Makes 8 servings.
