Made this today. Been meaning to for a while. Adapted from Michel Montignac's "Slim forever the French way".
250g Chocolate (at least 65% cocoa)
5 eggs
Chocolate for icing (optional)
Melt the chocolate in a double boiler.
Separate the eggs
When the chocolat is melted, let cool down a bit.
Add the egg yolks, mix well (it'll look a little bit lumpy)
Beat the egg whites to stiff peaks.
Fold the egg whites into the chocolate/yolk
Pour in molds (I used ramequins)
Bake in oven at 500F for a few minutes (the cake will rise almost like a souffle, and will still be moist inside).
Take out of the oven, cool about 20 minutes (cake will fall down, it's ok)
Put in fridge for several hours.
Remove cake from ramequin.
If you want, melt some more pure chocolate and pour a thin layer on top of the cake.
