Do these White Chocolat Coconut Cream Bars looks fantastic or what?

Sure does. Looks like the complexity of preparation could be exceeded in the layers of

flavor. Charlie, I think you need to Larder Barter all those biscotti on hold in your freezer and whip up a batch of these...LOL.

C & P, Joe has made these several times for catering events. They're in T&T...

He can definitely provide input on the difficulty rating.

I've made them too. They are just a little time consuming but not hard & they are TRULY TERRIFIC.

One of the best cookies I've ever made.

Sounds like a plan, Charlie. Hitch up the freezer then and we'll have a bay area swap dinner when

you arrive.)

Yep, I've made them more times than I can count. They are not difficult, but time consuming,

Definitely worth the trouble. You've all got to try them.

I find chopping the dark chocolate for the shortbread crust the most tedious. When I'm in a hurry I grate it, though it's better chopped.

The nice thing about these is that they can be made in stages, and they can be made many days ahead.

They're always a hit. When you bite into them it's an explosion of flavors. I love to watch people's eyes while they chew their first one. Also, because they are so rich, they don't disappear quite as fast as some sweets. One or two is enough for most people.

Joe, have you tried chopping that chocolate with a large serrated knife--works much better for me

No, but I will. The food processor produces a lot of powder along with small pieces,

and the big chunks have to be picked out and re-processed, repeating several times.

Ya'll might consider Sherrie Yard's suggestion: Microwave blocks of chocolate

for 3 shorts bursts of 5 seconds each to ease and facilitate chopping. She uses blocks of chocolate to cut chunky chips for cookies.

Sherrie Yard is the executive pastry chef at Spago's.

was it you Marilyn who got that nut grinder to use for "grinding" chocolate? wondered if that would

do the job here.

Isn't it just the greatest thing?! That, and using my coffee grinder to grind spices smileys/smile.gif
