I made them once before, sauteed and mixed with roasted poblanos as taco garnish/filling and they were OK but not great.

 
Is that the cactus? We just had it at Epcot at the mexican restaurant. We

had to ask our waitress what the small diced items were...I thought they might have been fresh okra from the texture. We like them.

We ended up at San Angel for lunch on our second visit back.

 
Yes, from prickly pear cacti.

They can be a bit slimy like okra but to me tasted more like citrusy green beans. They were growing wild on some property I own with my brother and he started semi-cultivating them. Now we have lots and he wants to start eating them. I generally liked the taste and make Mexican food fairly frequently so am happy to oblige.
