Do you have any experience with Burrata cheese?

Whole Foods usually carries it. I understand it's a rich mozzarella made with cream and has a

texture somewhere between fresh mozzarella and ricotta. I've used it on pizza margarita with tomatoes and fresh basil, and also in fusilli pasta with fresh spinach, lemon and toasted pine nuts. You can easily substitute fresh buffalo mozzarella. I've used fresh bocconcini at times.
