Barb, I say go ahead with this recipe. Here is what I would do

I think you can be quite successful using this recipe. But I would cook the "noodles", cool and keep in a covered container to retain any moisture (as you know sweet potatoes are usually dry) . I would cook the caramelized onions and keep in another container. Just before serving I'd reheat the "noodles" with the caramelized onions then put the goat cheese and pine nuts on. If the "noodles" seem a little too dry, I'd reheat with a bit of veggie broth but take off the excess before adding the toppings.

Personally I might consider using Butternut Squash in this recipe as it would stay "juicier".
