Doctoring brownie mix - Duncan Hines - a couple of questions

The price was right and I had 9 great coupons so I bought Duncan Hines "premium" brownie mix - 6 Triple Decadence and 3 M&M's. I was thinking of making 3-18x12 batches of 3 boxes each, some for teachers at school and some for the robotics team, and wondered what you might do to make them taste "homemade." I was planning to substitute coffee for the water and add espresso and cocoa powders but I wondered about adding butter. Most of the scratch brownies have a butter base. So...

1. Any suggestions for add-ins and how much?

2. Would you add butter and how much?

3. How would you adjust temp and timing for the 12x18 sheet?

4. Would I be wise to bake in smaller pans?

Hi Colleen, here is a recipe that my sister used to make REC: Easy Mint Brownies

You could sub a different chip for the mint chips and the same for the frosting. These were very tasty and easy.

EASY MINT BROWNIES

Amount Measure Ingredient -- Preparation Method

1 package brownie mix
10 ounces mint chocolate chips
Frosting:
1 cup sugar
5 tablespoons butter -- not margarine
1/3 cup milk
6 ounces milk chocolate chips

Follow instructions on brownie package, but double the eggs asked for, and add the mint chocolate chips. Bake according to directions on box, but add 3 extra minutes to required time. Put sugar, milk and butter into a small heavy saucepan, Bring to a boil, and boil for 1 minute. Remove from heat and stir in chocolate chips. Stir until frosting starts to thicken, about 3-5 minutes. Frost brownies when cool. Cut into 48 squares.

I always use coffee and add a bit of vanilla. I have also added butter and even yogurt

and they turn out nicely. I think if you use a 12X18 sheet you should be fine since the brownies will be not too thick and should bake up fine. I would bake at the same temp, 350, but not any higher so the edges don't get too done. Maybe even lower a bit. I love to stir in chopped up Symphony chocolate. It is nice and rich. Stirring in some cherry juice from marachino cherries for some of the water/coffee is also nice. Gives just a hint of cherry. I made some doctored brownies for work on Monday, and I like to bake them in my mini muffin pans. Just after taking them out of the oven, I press in a miniature Reeses cup, or Jr Mints or Rolos, or now for valentines day they have Hershey kisses that are filled with cherry cream. I used those and it was delicous. Press in while still hot and they melt in a bit. OK, this sounds soooo Sandra Lee.

 
I typically add about a T. of cocoa powder and a good squirt of chocolate sauce

(like Hersheys - so from a squeeze bottle).
