I need 1/4 cup of fresh celery. I just

need one lousy stalk.

That's all I need, and I don't anticipate

needing fresh celery again anytime soon.

If I buy the whole bunch, I'll just stick it

in the freezer, and find it in there three

months from now, looking all freezer-burnt,

and I'll just throw it away.

I can go to the grocery store and buy ONE

carrot, or ONE little onion. Why can't I

buy just ONE stalk of celery?

We can put a man on the moon, right?

I only need ONE STALK!!

It just needed to be said.

 
Scott, I'm with you. Sometimes a recipe calls for 4 sprigs of cilantro.....

which is not my favourite herb.......and I am forced to buy a whole bunch.

 
If your store has a salad bar, that may solve your problem -

I have the same issue - as none of us eat celery, I only use it rarely in cooking.

What a simple solution. I never thought of that for some ingredients that I rarely use.

 
maybe you could talk to the head of produce. our stores sell it by the stalk as well as a bunch.

 
Sylvia, I buy bunches of Italian parsely and chop the leaves in my processor and then freeze in a

plastic container. when I need some, I just scoop out however much the recipe calls for. it keeps beautifully like that. smileys/smile.gif

 
Or they might be willing to give you the trimmings. So much of the top gets lopped off.

 
I found prepped mini-celery sticks for lunches. Spent as much for my dish (and two

2" stalks for the cook) as I would have for an entire head of celery.

But at least I didn't find it buried and rotting in the "this will be so healthy" veggie bin 2 months later.

 
sauteed celery makes a very nice veggie dish. I can look for my recipe if you're interested.

 
When traveling in our RV, I have come across supermarkets who have the large stalks of celery

and the hearts, that can be bought separately. I love that because I mostly use just the hearts and leaves. The rest turns bad before I can use it up.
Randi, I will have to try your suggestion of sauteed celery. Actually, it sounds wonderful.

 
Hate when that happens but now you could take the opportunity to make a

soup...vegetable soup or any soup that requires a base saute of the trinity (onion, carrot, celery), and/or chicken salad or tuna salad sandwiches. Or snacks of celery filled with peanut butter. Not sure how much I'm helping but since you already have the whole bunch of celery thought I'd throw out some options for use. :eek:)

 
One of my favorite snacks is celery and

hummus. I've had times when I go through a celery heart a day and pounds of hummus.

 
Oh, but you WILL be needing fresh celery again soon, because you will be making

Celery with Anchovies

Pour a thin puddle of your best extra-virgin olive oil onto a rimmed soup plate or salad plate. Arrange 1 thinly sliced clery rib in a single layer in the oil. Garnish with freshly cracked black pepper, coarse sea salt, 2 anchovy fillets, nicoise olives, and celery leaves. Serves 1.

Should an unexpected guest drop by, you can use up the rest of your celery with

Celery with Blue Cheese

Cut 4 trimmed celery ribs crosswise into 1/2-inch pieces, transfer to a bowl, add 2 oz crumbled Maytag or other good blue cheese, 1 tbsp extra virgin olive oil, a little salt and pepper. Gently toss, and serve well chilled. Serves 2.

Or invite in a few friends, and you will have no celery left over after

Apple and Celery Salad

Whisk together 2/3 cup mayo, 2 tbsp chopped fresh cilantro, 2 tbsp lemon juice, salt and pepper. Cut 5 celery ribs and 3 crisp red apples into 1-1/2-inch-long julienne strips (or, what the heck, just chop them). Toss everything together. Serves 6.

 
I never thought of this before - but make/freeze miropoix

I too always have limpy carrots & celery in the fridge - don't get to them - don't remember they're there.

The other days I was watching a show (OK - I admit it was that Sanda Lee person -- but honestly I watch because it's like a train wreck -- I can't possibly get any worse and yet it does!!!!)

But I digress -- the one take-away I did get from the show was that she pulled out a pouch from the fridge of pre-made miropoix. And I thought to myself - how lazy can a person be.... and then I thought to myself -- that could be a good way to stop wasting those carrots/celery that good bad before I get to use them all. Just chopped em all up - baggie them and freeze until I need.

 
That's a really good idea. What few recipes don't start with mirepoix? Although, I usually

start with the onions and then add the carrots and celery. Hmmm...maybe one bag inside the other all in the freezer.

With big bunches of it, too, the chopping could be done, not prettily, but quickly, with the Cuisinart.

I really would like to find ways of spending fewer hours each day, just preparing dinner.
