Does anyone have a good T&T recipe for a rum baba or savarin? Can it be made ahead a maybe frozen?

My daughters birthday is next week and wants it for her birthday cake. I had a great recipe but haven't made it for years and can't find it now. TIA

I love Laura Calder's foolproof recipe for savarin. You can "soak" it a day ahead. You could

probably freeze the unsoaked cake, but since it keeps well once it's sponged up all the booze, it may not be worth it.

If your daughter is a "local, seasonal" believer, I don't know what you could sub for strawberries at this time of year. Chopped candied orange peel might work in the cream. Or an orangy (not lemon) curd folded in.
