Does anyone have a T & T recipe for Japanese Curry? It is so good, I'd love

to make it at home from scratch.

I've used the packaged curry roux blocks from the local Marukai market, and while the flavor is perfect, the saltiness is too over the top, even for me the salt lover.

I've found a couple of promising ones online, but thought I'd ask my friends first before diving in to a new recipe.

 
Lisa, haven't made this, but enjoyed it twice at the Japanese pavilion in Epcot

Japanese Curry with Beef, Yakitori House
8 oz. beef (for stew), cut into 3/4" chunks
8 oz. onion
6 oz. carrot
6 oz. potato
8 oz. S&B curry mix
.3 oz. butter
.3 oz. vegetable oil
.3 oz. S&B curry powder
.3 oz. honey
pinch of black pepper
pinch of salt
30 fluid oz. water
short-grain rice

1. Add vegetable oil to large saute pan over medium heat.
2. Add beef chunks, then salt & pepper to taste; brown.
3. Chop onion, carrot, & potato and add to saute pan.
4. Saute ingredients until vegetables are tender.
5. Add water and curry powder to pan; bring to a boil.
6. Reduce heat, skim off the surface, then add curry mix cubes; stir until dissolved.
7. Add honey and butter to pan; continue to simmer over low heat until beef is tender, approximately 30 minutes.
8. Once beef is tender, remove from heat.
9. Serve hot over short-grain rice.

 
Thanks for this! I am actually looking for a sauce that is completely from scratch

as the packaged curry mix, while very tasty, is way too salty to eat it more than very infrequently.

One serving has 40% of the RDA for sodium, and you can really taste it. Considering I was a piggy and ate more than a single serving's worth....not a good thing. smileys/bigsmile.gif

The mixes are yummy, though. The S & B one called for in the recipe you posted is the one I used the last time - very good, and the favorite in the taste test you linked to.

 
I asked my Japanese friends and they all use the box mix, the golden one...

isn't that funny! Do let us know what you end up trying!

 
I will admit I don't watch my fat intake as closely as total calories - 7 grams per serving

on the one I used, so I had 14 grams from the sauce, plus whatever I had from the meat - it was shabu shabu style shaved rib-eye.
