It sounds a lot like this REC: Caramel-Chocolate covered Matzo
I have made this a number of times, and also seen it using saltines. I'm guessing you could sub graham crackers as well.

Caramel-Chocolate Covered Matzo

Amount Measure Ingredient -- Preparation Method
1 Large Package Plain Matzo
1 Pound Butter
2 Cups Dark Brown Sugar
Pinch Salt
24 Ounce Pkg Chocolate Chips
Toasted Nuts (Almonds, Pecans, Walnuts) -- coarsely chopped
Completely cover 2 large baking sheets with matzo. Preheat oven to 350°F.
In a saucepan, melt the butter and stir in the brown sugar and the pinch of salt. Cook until it boils, stirring to dissolve the sugar, then boil the mixture for 3 minutes. Spread the mixture over the matzo as evenly as possible. Bake in preheated oven until golden. (No time given, so watch it carefully.)
Cover the butter mixture with the chocolate chips and spread with a spatula. Return to oven to help melt and spread the chocolate, if necessary.
Sprinkle with chopped nuts. Cool, and break into pieces. Store in airtight containers, with waxed paper between layers.

NOTES : This incredible treat was shared by an Epi friend......it tastes like English toffee, and few suspect that matzo is the base!
