Does anyone remember beehive cakes? I'm going back again to when bakeries...

made everything from scratch.

These were yellow cakes filled with pastry cream, but the name came from the topping. I don't know how to describe it. It was light brown, bumby, not crisp, but kind of chewy. I guess it had honey in it. All the bakeries here sold them, but they have disappeared.

Yes, I remember it & have made Nick Malgieri's but here is something

that is very quick, simple and similar or at least it remindes me of it and seems easier.

Tosca Cake

Helen used to bring this cake into work usually still warm from the oven. It's a really quick and easy but delicious.

4 oz melted butter
unflavored bread crumbs
2 lg eggs
1/2 c sugar
1 tablespoon sugar
2/3 c flour
Almond Topping
2 1/2 oz chopped blanched almonds
5 tablespoons sugar
5 1.2 tablespoon butter
1 tablespoon flour
1 tablespoon heavy whipping cream

1. Preheat oven to 350°.

2. Grease an 8" round pan with some of the melted butter and coat with breadcrumbs.

3. Beat eggs and sugar well. Pour in cooled melted butter. Fold in the flour.

4. Pour in prepared pan and place in preheated oven.

5. Topping:

6. Mix all ingredients in a saucepan. Stir at medium heat until boiling.

7. Add the topping after the cake has been baking 30 minutes. Return the cake to the oven for 15 minutes.

8. Cool on wire rack.

Thanks for these Gay. The cake I remember probably was a takeoff on this traditional German..

cake. The topping of these seems like the way to go, but I don't remember it having nuts.
