Does anyone use freeze dried shallots for cooking? Planning a Penzeys order

and came across these. Sometimes I don't have shallots available...they do not keep as well as onions. Wondering if they are worth buying?

 
They are a little sweeter than regular dried onions, they do tend to clump up

a bit but it's humid here in SF. I liked the flavor a lot, I need to order some too!

 
I wondered about that because on another foodie site someone mentioned

they use Penzeys Shallot Salt on their table for everyday, but found that it clumped up. I bought it and it is true. Now it sits because I don't want to take the time to loosen it.

 
I have had Penzy's garlic salt clump up in the past. Have just purchased a brand new bottle and was

recently wondering if adding a few rice grains would prevent that from happening. ??? Anyone tried that before or have an opinion? I usually just shake it over things and don't measure any of it out which, I realize, might run the risk of putting a hard rice grain into something.

 
What if you used a fatter rice grain such as Arborio -- one that won't fit through the shaker holes.

Or another medium-sized wider-grain rice. Or give Penzey's a call and ask if they have an easy solution to prevent clumping in the jar.

 
1) I never thought of using Arborio--excellent suggestion! 2) I also called Penzey's &

they told me to store it in the refrigerator OR the freezer which will help keep moisture out. Thanks so much for your help and ideas--now I have a couple new things to try.
