Hi Shaun, Haven't used GreenPan cookware, but I
was given a scanpan skillet for x-mas and it is *green* aka non toxic. I love it, just ordered the 1 qt pan. Found this at a better price than Amazon or a few other sites I visited.
It is so nice to have a non-stick skillet that actually works.

I had problems with an early ScanPan.
The non-stick sure didn't work, and the black inside of the pan turned a gray color. I talked to a shop that sold the newer generation ScanPans and they told me to boil water with dish washer detergent in the pan and then to re-season it with vegetable oil. It cleaned the pan and returned it to its origial state. It heated beautifully, but had to be kept oiled and seasoned for sauteing. The newer ones have a different surface that is much better.

I have one and it is fine But note they are made in China where consistency
in products is lacking because of "shadow factories" where production is not regulated and different cut-rate methods/materials/ingredients/lack of worker safety are used. The reason these "shadow factories" exist is because the demand for the particular product is so high that the approved factories can't handle the volume or keep the price as low as the companies/clients require. (Walmart/Target/QVC/HSN.)
Thus the seemingly puzzling variablity in customer reviews.
I gave one small 8 inch pan for a gift. My sis likes it a lot, but I guess we were lucky....

Haven't cook on one but I can tell you they are very lightweight
one of the girls at work got one and it was delivered to the office. Seemed kinda flimsy to me but her mom, swore by them and hence sent her a set. She on the otherhand admits to not being a cook, otherwise I'd ask her about them for you.
