Does anyone use the Doughmakers pepple cookie sheets? Gourmet has recommended them...

in their Dec issue. I am curious if they really work as well as the article indicates.

I love my silpats but have a couple of recipes that just won't work on them AND my old air insulated cookie sheets need to be replaced.

I should probably write a column on kitchen stuff or something. I can't resist trying it all so I can probably give you a good comparison of all of these.

I have the insulated sheets and use them the least. I think I have bought every pan Doughmakers makes for either myself or my mom. I don't bake layer cakes much so the round ones I bought for mom who bakes all the time. She loves them and takes them with her when she travels to relatives and knows she'll have to bake her famous cakes. So they are great for cakes.

I have the sheet pans, rectangular pans, pizza pans and cookie sheets. Love all of them. Things get a nice brottom on them but do slide off with minimal crumbs left but no real sticking.

My husband loves to have things baked with cheese on top - chicken strips with cheese and peppers, etc. The cheese does slightly stick.

Which is where Silpat comes in - we make cheese 'fricos' and such and none of it ever sticks. I use the Silpat for baking also but find that the results on the Doughmakers is basically the same as the Silpat for almost ever cookie I make.

 
i got one last year and prefer it over my insulated sheets. i've had the odd batch get a little too

dark, as i was used to my insulated sheets, plus have been adjusting to an altitude change since we moved, but overall love the doughmakers sheet. and they're easier to wash than the insulated ones. i have found that if i'm baking with puff pastry i need to use parchment or a silpat, as it consistently sticks to the doughmakers sheet (but maybe i'm doing something wrong).

 
You might try buying direct from them....

I started buying from them about 5 or 6 years ago when they came to the Christmas Village and they always have specials and throw in free pans. Give them a call and see what sort of deal they'll cut you!
