Does anyone who buys chocolate at ALDI know if the German dark chocolate

Okay...I'm back to being an adult. You're at the HIGH end of semi and the LOW end of bittersweet.

Base this on your own tastebuds. If you like Nestles regular "semisweet chips" those are around 48%. I think Ghirardelli's semisweet runs around 60%.

So baking with Aldi's 65% will give you a darker, denser, less sweet more chocolately taste.

The attached article from Cacao Goddess Alice Medrich gives the same recipe adapted for both semi and bittersweet.

Personally, I would put it in the bittersweet bucket, since my favorite semisweet is 54%.

Ghirardelli 60% is bittersweet - they don't give a percentage for their semisweet. The problem is

that each company varies with what they consider bittersweet and semisweet. There are no standards, except that if it's 35% or more, it's considered dark chocolate, which is bittersweet and semi-sweet.

 
Oh man, I forgot about the percent sign! Anyway, as I tried to say, there are no real standards -

anything that's 35 percent or over is considered dark chocolate, which is bittersweet and semi-sweet.
