Doesn't this sound good - but you need a 'whip'

I was at the kitchen store looking at possible Christmas gifts and came upon this whip thing, sodas water like make. The book offers some delightful recipes. I wonder just how good it will be to use it.

Apple Chutney Espuma

450g apples (what kind)

350g double cream cheese (not seen that here)

100ml reduced veal or poultry stock (no problem)

2-3 shallots

1-2 garlic cloves

1tsp fresh ginger

3TBL veg oil

1-2tsp curry powder

50ml apple juice

10ml apple cider

salt

white pepper

heat oil and gently sweat finely chopped shallots, garlic and ginger. Add curry pwd and saute briefly.

Add peeled, diced apple chunks with apple juice, stock and vinegar.

Cook until tender and season with spices.

Finely puree in blender and stir in cream cheese. Pass through fine sieve and pour into...this gadget...the IL iSi Gourmet Whip

Screw in 2 cream charges and shake vigorously. Chill for 3 hours.

Serve in a glass on herring, salmon or tuna tartar on crackers or crisp bread.

OK, so I only saw 500ml gadgets and they were quite expensive but this sounds delicious.

Anyone use these at all...would they make a good gift?

 
I've had a big one for about 20 years. Used it once. You have to have a large volume to make

it worth the trouble. Perhaps if I had a small one, I may have used it more often. It's handy to dispense cream at the last moment but otherwise, it's easy enough to just use a wire whip.

 
The recipes in the book all suggest a litre whip...I am returning the one I have just bought

as it is 500ml....and all the recipes in the booklet are for 1 litre sized ...also wondering if the thermo bottle is better than the gourmet bottle...this is the iSi brand (did I mention that?)

 
So they said when I went back, but some recipes say they need a long cooling time....

I got a one liter!
