Doing a progressive breakfast for 30 what to serve?

I will have four different locations at one resort- 30 people attending- a fam trip. I already have some ideas but am interested in yours. 7:30 a.m. Locations will showcase the wonderful things about the resort (on a cliff overlooking the ocean on Kauai smileys/smile.gif No alcohol. No "stations" like waffles, etc. will be possible.

 
I used to get her Nantucket Open-House Cookbook out of the library all the time.

This was back when I was poor and the idea of buying a cookbook was beyond my reach.

 
I'm picturing a proscutto/honeydew melon idea...but with Hawaiian fruits

pineapple and ham
mango and protein
fruit and spam

 
My SIL makes a "Haole" Paniolo Breakfast as a throwback to her time there

If you will be able to serve warm items, this may (or may not) be a Hawaiian type meal. I'd do stations with mimosas or version of (maybe a different kind, using a hawaiian fruit juice as a base, at each station), smoothie shooters, fruit skewers or salad displayed in coconut halves, maybe some breakfast type sliders on Hawaiian rolls, macadamia nut muffins/coffee cake...

My SIL and a former husband were stationed in Hawaii and she picked this up as a favorite breakfast from her time there.

"Haole" Paniolo Breakfast

What she ate was called the "Paniolo Breakfast"....Portuguese sausage, eggs and rice....or Spam. This is her version.

8 eggs, beaten
4 cups cooked rice (2 cups dry rice/4 cups water)
1 Link .Portuguese or gluten free turkey sausage
Soy Sauce to taste (or Tamari to make it gluten free - she's also used Bragg's Liquid Amino Acids, but prefers the Tamari)

Make rice: Put 2 cups of rice into the rice cooker with 4 cups water. Or cook rice in a saucepan as directed.

Cut turkey sausage into small pieces and saute until warm. Add beaten eggs and scramble eggs.

When egg and sausage mixture is completely cooked, add rice into the saucepan. Mix all ingredients and add Soy Sauce (or Tamari) to taste.

My fave has always been bagels, lox, capers, red onion, cream cheese, dill; all the rest goes

to waste for me. I have attended some absolutely top drawer brunches and can never get away from the smoked salmon and bagels.

I know, you have mentioned that everyone coralates Hawaii w/ Pineapple. But it is true! I have never been, (As you know I would reach out to you), but there is a belief that you have the best pineapples! SO, if you are at the resort w/ travelers, you must do something with a pineapple! : )

 
That's the cookbook! I couldn't find it today. Good memory, and says alot about the recs; as I

know you peruse lots of cookbooks!

 
thhis sounds very much like those overnight egg dishes/stratas. could all maybe be done night before

 
also, papaya slices with lots of lime wedges for squeezing over. yum. my brekkie just last week

Something fruity, something sweet, something bready. Baked French toast squares? Bread pudding? I'd eat bread pudding for breakfast.

I agree Marg- but I just did an event with a smoked salmon cheesecake so must have different stuff.

 
Thanks everyone- this is not some "takeoff" on what people think Hawaiian food is

It is an upscale progressive breakfast showcasing our resort. There will be no Spam or local food. I've decided on the following:

Location #1 Fresh-squeezed juices, coffees (Kona and Kauai) and teas.

Location #2 Lemon Bread, German Apple Cake, Cinnamon crunch coffee cake

Location #3 Heavy stuff- breakfast casserole (shredded potatoes, eggs, (cheese, bacon, mushroom sauce), veggie Frittata.

Location #4 at a BBQ location right on the bluff overlooking the ocean- BBQ: marinated skewers of fruit, granola/ lemon cream with strawberries parfaits, grilled pineapple/ marshmallow S'mores.

 
Yes, actually have done this one before as it turns out and I can make it night before.

This is a beauty of a recipe. It will sit on a glass cake stand and be sliced. It is so gorgeous AND good.

 
Erin, all it takes is a flight from NY- come stay with me! This is a very, very beautiful place.
