Got leftover ham? This is a recipe from my childhood - my elementary school cafeteria used to serve this and it was my very favorite. I still like it once in a while now. It's like a very flavorful ham salad with a little hint of a tomato taste.
Ham
Cooked bacon
Tomato
Mayonnaise
No proportions, except whatever looks/tastes right to you. Maybe 2:1 ham:bacon and one tomato per half pound of ham?
Cut up ham and tomato into chunks; tear apart cooked bacon. Combine and put in food processor and process until chopped medium-fine. Remove to a bowl and add mayonnaise - use as a spread on whatever you choose (I, of course, preferred the fluffy white Wonder bread!).
Somewhere in the world there is a cafeteria lady who would be proud! Now if I could only find "Lincoln logs", my favorite school cafeteria dessert. They were probably only brownies (or even dense cake!), cut into thin slices, frosted, topped with sliced almonds and served 2 or 3 to a bowl, but they were something special back then. ;o)
