He makes chocolate tempering look soooo easy!

I tried his chocolate covered cornflakes, and it was great! I think these will make great little favors or something....

I'm going to practice making these 'til Christmas.....

Sandi, My mother used to make these for us when we were young

children. I followed suit when my children were little. I still like to make them once in awhile.
They are soooo easy and kind of fun.

 
Brilliant tip about the blow dryer. Here's a favorite version for our vegan friend.

Amaranth cereal flakes
almond butter, slightly warmed
melted bittersweet chocolate

I used to add extra crushed cereal and roll it into truffle balls, but this youtube version looks even easier.

 
I have a question - does tempered chocolate melt on your hands?

My chocolates look okay - they set up, and there's no bloom, but I can't eat it without it melting on my fingers. Does this mean that the chocolate was not in temper?

And another question - I've seen different tempering instructions.

Some say to melt the chocolate up to 115-120º, cool down to 80º, then take it back up to 88º for dark chocolate.

Others say to melt to 115-120º, then cool down to 88º.

What is the purpose in the first instance, where you take the temp all the way down, and bring it back up?

I need a chocolate expert!!
