paper's food section today. It is a cookie that this market that I go to a lot sells and someone asked for the recipe. I thought they sound interesting and I'm think I'm going to make them. Thought maybe some here might be interested also.

Doris Italian Market & Bakery's Chinese Cookies

Makes about 2 dozen large cookies

2 cups sugar

½ cup almond paste

½ teaspoon salt

½ teaspoon baking soda

12 ounces vegetable shortening

4 large eggs

5 cups flour

1 teaspoon vanilla

½ teaspoon almond extract

6 ounces melted semisweet chocolate, divided

2 cups walnuts, chopped

Preheat oven to 360 degrees F. Line a baking sheet with parchment paper, set aside. Using the bowl of an electric mixer fitted with a paddle attachment on medium speed, combine sugar and almond paste. Reduce speed to low and add salt, baking soda, vegetable shortening, eggs, flour, vanilla and almond extract. Mix until you have a smooth dough. Add 2 ounces melted chocolate to dough to give desired marble look.

Separate dough in half. Form two logs about 2 ½ inches in diameter. Roll each log in chopped walnuts.

Cut logs into 12 pieces. Place on prepared baking sheet. Bake for 12-14 minutes, or until golden brown. Cool completely.

Fill top of cookies with remaining melted chocolate.
