I like that you can make the appetizer in stages, keep in separate containers and then pull it all together for the party. I served it on a large silver platter; and threw some extra basil and toasted pignoli nuts over everything. It really has a beautiful presentation; easy, make ahead, refreshing, and enjoyed by all.

It was the first app to be devoured; and I have rec'd email requests for the recipe.

It was very good - but makes a substantial amount. My husband

put some in an omelette and I've just added it to a couscous salad. It was very pretty on Canada Day, being red and white - served on our red and white flag:)) Thanks Traca.

You guys are too funny! A simple search here will reveal nearly all my favorite recipes. If it's not

here, I simply forgot or haven't typed it up from a favorite cookbook. LOL!

On the subject of books...I have been persuaded to work on my first book, and it is currently a work in progress. I'm working on the proposal and will be courting publishers this fall. This first book is not a cookbook, but now y'all got me thinking. A cookbook could be the follow up project! Fingers crossed. smileys/smile.gif

 
well then, I want MY set of recipes done in calligraphy with illuminations gilded by nuns who eat

nothing but fried pork rinds.

Oh...with semi-precious jewels embedded in the leather. Wait, did I mention I want the recipes written on virgin calf's vellum hand-made by the Sisters of Perpetual Shabu Shabu (Korean Hot Pot)?
