Dr. has had my daughter on a milk/cheese free diet for the past few weeks

trying to diagnose some stomach issues she was having. We've done pretty well, but I tell you, it's getting old. It's like all of a sudden, TODAY, every one of us is so over it.

I'm running out of meal ideas. I'd like to make some sort of pasta tonight, but other than spaghetti, what kind of pasta is good even without cheese?

And other than pasta... any good dairy free meals? We've done stir-fry and other asian flavored meals to death in the past couple of weeks. I've used soy milk IN things when she wasn't looking, but it has to be sneaky. French toast worked well with it.

 
How about pasta with sauted squash? Saute cubes of peeled squash in olive oil with garlic, onion,

Add chopped fresh sage, salt and pepper. Toss with rotini and sprinkle with toasted pumpkin seeds. Bacon and/or chopped kale or spinach would be good too.

Some other ideas:

Coconut milk-based curry with rice or potatoes
Chicken mole
Shells stuffed with mashed tofu instead of ricotta.

 
REC: Pasta With Roasted Vegetables and Garlic Broth - This is fantastic, even without the cheese!

PASTA WITH ROASTED VEGETABLES AND GARLIC BROTH

INGREDIENTS:

2 carrots, cut into 2 x 1/2-inch strips
2 bell peppers, cut into 1/2-inch strips (I used 1 red and 1 yellow)
1 small fennel bulb, trimmed, cut into 1/2-inch strips (I made them thinner so they would cook through)
1 red onion, cut into 1/2-inch wedges (I used 1 large)
12 large garlic cloves, unpeeled
3 tablespoons olive oil
1 14 1/2-ounce can vegetable broth or low-salt chicken broth (I used low sodium chicken broth)
2 cups grated Parmesan cheese (I used Parmigiano Reggiano)
1/2 cup chopped fresh basil
1 pound penne pasta, freshly cooked (al dente)

DIRECTIONS:

Preheat oven to 400°F.

Mix first 6 ingredients in large bowl. Spread vegetables and garlic on baking sheet. (I used two large baking sheets lined with foil). Sprinkle with salt and pepper. Roast until just tender, stirring occasionally, about 30 minutes.

Peel garlic and place in medium saucepan. Add broth and simmer until reduced by half, about 10 minutes. (This usually takes longer, about 20 minutes).

Combine roasted vegetables, garlic-broth mixture, cheese, basil and pasta in large pot. Toss over low heat until sauce coats pasta but remains slightly soup-like. Season with salt and pepper.

Serves 6.

Another great one where you can omit the cheese: Sweet Peppers with Pasta

SWEET PEPPERS WITH PASTA

"The key to this recipe is cooking the bell peppers until they’re meltingly tender..."

INGREDIENTS:

4 large garlic cloves, minced (I crush them first, then chop)
1/4 cup extra-virgin olive oil
6 large red and yellow bell peppers (3 lb.), cut into 2-inch-long julienne
1/2 cup dry white wine
1 lb. penne
Salt and black pepper, to taste

DIRECTIONS:

Cook garlic in oil in a large heavy skillet over moderate heat, stirring, until golden. Add peppers, wine, and salt and pepper to taste, then cook, covered, stirring occasionally, until very tender, (around 20 minutes or longer).
While peppers are cooking, cook pasta in a 6-qt. pot of boiling salted water until al dente and drain. Toss pasta with peppers and season with salt and pepper.

Makes 4 generous main course servings.

I have tons of recipes without dairy - What are you looking for? Vegetarian? Chicken? Fish?

 
Any pasta with fish or seafood doesn't have cheese in it anyway...

Penne tossed with tuna and tomato sauce, lots of chopped parsley and even olives if you like them...

Linguini in clam sauce, spaghetti with sauteed shrimp...

You could make a pesto without the cheese and then add it in for others...

 
Not necessarily vegetarian. We're just in a rut of the same dishes...

I looked at some websites today and she and I thought that peanut noodles sounded yummy and so did BBQ pulled pork sandwiches.

She likes shrimp, so I could do a scampi type pasta.

Guess I'm looking for family-friendly dinner options. smileys/smile.gif

 
Cathy's Laarb is always a hit. Nice change from stir-fry. I make it easy and simple

by serving it on a big platter; cut up romaine; I add h20 chestnuts; etc. The meat is then added on top. Sometimes I add a bit extra sauce to be used for a "dressing". Looks pretty and tastes great. I like the flavors as well as the combination of the "hot" meat over cold salad. I use ground chicken or turkey also......

shrimp scampi/linguine/kale & sun dried tomato pasta tomorrow night. Garlic bread w/olive oil?

Anyone done this? Just mix olive oil and garlic together, brush on bread, and broil? Or is there a bigger picture than that?

 
Carianna, that sounds fine to me, but the way I've usually heard it is in reverse

Grill, toast or broil the bread, rub with a cut garlic clove, then drizzle with oil and serve immediately.

That's a lot of last-minute steps. Any way you do it is bound to be delicious

 
I'm thinking of doing this... don't know if it will work or not.

I like the flavor of the olive oil/balsamic dip for bread, but want it all-in-one. I'm going to simmer the garlic in the olive oil for a minute to cook a tiny bit. Then I'm going to stir in a bit of balsamic. Then I'm going to brush that on halved bread and broil to crisp it a bit. We'll see how it works!

 
Worked pretty well! Bread got crispy on top, which I worried about. Was a little bland...

Next time I'll up the balsamic amount. Daughter was thrilled with the whole dinner! Actually, the whole family was. smileys/smile.gif
