Dredging fish or chicken in macadamia nuts to saute, can I use roasted, salted or should they be raw

right on suz.... if they are already roasted, they will brown too much in the sauteeing

But salted is ok - just don't add any other salt

 
You might be able to do them in the oven - lay a piece of foil over them when they are

as brown as you want them

 
I'm not sure I agree with that. If they're lighty roasted once they're chopped up and mixed with

bread crumbs and other ingredients, I think it should work. A lightly roasted macadamia nut is probably just fine as the exterior is going to be incorporated pretty well with the lesser roasted interior once the nuts are chopped up. Curious, I'd give it a try...in fact, what I'd do once you coat the fish or chicken in your desired crumb mixture is sear them briefly in an ovenproof skillet then pop the skillet in the oven to finish. You'll end up with a moister finished texture anyway by finishing in the oven vs doing it stovetop the whole way, and won't risk the crumb coating getting too brown. I wouldn't cover the fish or chicken once it's in the oven, as you don't want to 'steam' it and risk the coating coming off. But if you opt for stovetop the whole way just keep an eye on the heat...go moderate flame/heat, not high.

 
Last week in Monterey I had a fantastic macadamia nut mahi mahi that was SO

seriously good we were both going "mmmmm" "mmmmm" through the meal...lol. The restaurant wouldn't divulge the recipe so now I'm on a mission to approximate what we had. This thread got me inspired. Going through some google links I happened upon this mac nut crusted mahi dish that sounds pretty good. The dish we had in Monterey was far more complex in the treatment of the fish and the sauce but this looks like a simple and easy dish to execute for a quick meal. Also interesting that it calls for toasting the chopped macadamia nuts.

Right you are Pat.... if mixed with bread crumbs and provided they are 'lightly' roasted it should

be fine - just watch carefully toward the end of cooking. Sounds like it would be a delicious coating!

 
I ADORE mahi mahi!! What was the name of the restaurant? Was it served with a sauce?

By the way, Roys restaurant here in downtown L.A. is absolute fantastic! It looks and sounds like the same mahi mahi I had from there... if so, this would be a marvelous recipe to try - THANKS!!

 
It was the Monterey Fish House, on Del Monte Ave. Here's a

link to Yelp reviews, can't seem to access the website for Monterey Fish House right now (www.villagefishhouse.com)...maybe they're updating it. It was a honey nut crusted mahi dish...soooo good, with a nice sauce. DH had a blackened sea bass that was equally as good, and we shared a chanterelle mushroom appetizer that was pricey but so amazing it was worth every penny.

Reservations are hard to get there so we were happy to snag seats at the bar. But we like dining at the bar sometimes anyway because it's a great place to people watch and interact with the staff and other patrons (we're the chatty type...lol).

Dining at Roy's both in Hawaii and here on the mainland has always been a great experience for us. We really should go more often. Delicious fresh fish with nice preparations.

Oh, and if you happen to be going to Monterey and want another restaurant recommendation off the beaten path, we like a place called Sandbar & Grill (http://www.yelp.com/biz/sandbar-and-grill-monterey). It's at the Fisherman's Wharf, down on the water, overlooking the marina with all the docked boats. It's another place where we like to sit at the bar and eat, and chit chat with others. We love the sandabs and this last time we also had fresh salmon with a really nice soy ginger glaze. The prices are quite reasonable compared to other Monterey/Carmel restaurants. We have other restaurant faves in the area as well, but more pricey. Let me know if you need pointers, I'm happy to elaborate.
