dried sausage

got two dried sausages for Christmas. Much too large for DH and me to eat in one sitting. can I cut into casing and then rewrap and eat again at a later date?

Pam, I think it would be fine cut into pieces if you freeze it.

Is it dried like Chorizo? I freeze Chorizo all the time and it works just fine.
