Drunken Noodles - Great but haven't mastered rice noodles - advice?

They were just gummy and gooey and I took them out of the water when they were still a little on the al dente but when added to the wok, ugh.. I wound up picking everything out of the noodles and adding a little more green peppers, tomatoes and threw in some mushrooms and part of another batch of sauce.

 
Rice noodles - I made some for supper tonight. Instructions said to boil for 3 minutes.

At 8 minutes they still had a hard raw bite. At 10 gummy - yuck.

 
Are they dried? Recipes I've made says to just soak in hot water and add to other ingredients at

the last minute. Has always worked for me. I bought some fresh noodles at Trader Joes and am nervous about preparing them as I've never used them before.

 
Ya. These are high-strung little things. I soak 15 minute in cold water, than blanch in boiling for

2 minutes to cook. Then back into cold to stop cooking.

 
Thanks - going to try this again! Question about lo-mein noodles

Elenor - I basically did what you did. The ones I got basically had no English on them so I just followed the recipe that said to place them in boiling water and cook. As you said, they seemed tough so I kept cooking and finally got them what I thought was about right and pulled them out to drain while finishing the dish. Added them to the dish and they were just clumped but sort of came apart as they hit the sauce. But then the sauce and noodles seemed to just turn into a gelatinous mess. I wound up picking everything out and making it a noodleless dish.

Going to try Marilyn's method. Not going to let these boogers beat me.

Now for my next thing I want to try - lo mein. But in the large ethnic market looking high and low and hundreds of noodles, I could not find that sort of square noodle all the restaurants use. Anybody know where to find those?

 
I'm going to try another brand of rice noodles too. I'd like to try the lo-mein noodles also. I

wonder if they cook like regular noodles.
