Dry Wonton Noodles - Malaysian Style

A typical street food on the streets of Malaysia. Very popular amongst the locals. One of my favorites!
Sauce:
1 tbsp Black soy sauce
1 tbsp White soy sauce
1 tsp Hot Sriracha sauce (to taste)
1 tsp Sesame seed oil
1 tbsp vegetable oil
Mix above well in individual serving plates
Vinegar Chilli:
1/2 cup fresh Chilli peppers (serrano, jalapeno, or thai chilli)
1 cup vinegar
Mix these together and let sit up to 8 hrs before serving
To set up meal:
Boil water. Add individual wonton noodles.
Once tender remove noodle from heat and place in cold water to remove excess starch. Drain well
Place noodle into sauce and mix well.
Microwave noodles to warm it up.
Blanch some green vegetables (i.e. yu choy, bok choy etc). Drain well and place on top of noodles.
Place wonton dumplings on top of noodles if desired. (recipe under wonton dumplings)
Instead of using wonton dumplings, may use chinese roasted pork (char sieu) or ground pork cooked separately with garlic and ginger as meat topping.
Serve with wonton soup on side and vinegar green chilli if desired.
