Can you overmarinate meat? The recipe said put the rub on and put in fridge for 8 hours or overnight. I left it in there for 24 hours before cooking. I'm not concerned about taste so much as I don't want anyone to get sick. TIA Therese

 
I've often marinated red meat for 24 hours. If it's poultry and you have a lot of acid

like lemon juice in the marinade it might be a little troublesome texture-wise. However, if the meat was refrigerated I don't think there's any worry of anyone getting sick.

 
I agree. Salt and acid actually act as preservatives, so it

is at least as safe in the marinade as out.
