My MIL hosts Easter, I have been making this since Charlie posted this on Gails. It just says SPRING is here! I do not do the artichokes, but rather find what is fresh in the store. It is usually a combination of leeks, portobello shrooms, asparagus, carrots, red peppers, etc. It makes such a beautiful, colorful platter. I roast the vegies in a mix of garlic / oil in the morning. Make the salsa verde the day before. Serve on a really big platter. It is so colorful and flavorful. I do drizzle the veggies with a bit of the salsa, but put the rest on in gravy boat in the center of the platter.
