Sorry it has taken me so long to respond . . .
AHH . . . egg salad sandwiches.
I came from a "mixed" marriage where we celebrated Christmas and Hannukah, Passover and Easter. It was a little crazy, but I didn't know the difference growing up.
Our elderly neighbors held an Easter Egg hunt each year . . . all the neighborhood girls got to color easter eggs on Good Friday . . . a full gross - 144 eggs. As the "big" family in the neighborhood we got all the broken ones. So, of course, all these broken ones were in addition to the 2+ dozen eggs my Mom had to make to satisfy the coloring ambitions of us kids!!
Little wonder that we had egg salad sandwiches for Easter "dinner". I wouldn't know until high school or so that other people had ham, lamb, turkey . . . whatever . . . who would have known? I thought egg salad sandwiches was the norm.
These days, I make lamb for myself, but only because it is on tremendous sale at my "greek" grocery. But, actually miss the egg salad. My sister has instituted an "egg salad day" on my Mom's birthday. What a GREAT idea!! Personally, I have an egg salad sandwich about once year a day . . . when I am feeling nostolgic for one of my Mom's best friends. We always had egg salad when Elaine visited.
So, one other thought . . . I always thought the Easter bunny brought SOCKS. Remember how Santa brought that orange in the toe of the stocking? Well, the Easter Bunny brought socks . . . seems that Mom just couldn't deal with finding four sets of matching socks from the "sock basket" for our one "dress up" day other than Christmas.
So Easter always brings memories of egg salad sandwiches and SOCKS!!
