Easter Menu

aw man, I had to look at the calendar to see when Easter was...I guess that says it all about what's on my menu.

(probably discounted easter candy)

The menu will depend on who is joining us for dinner.

I'd love to roast a leg of lamb, but there are too many family members who aren't fans. So, it may be ham, scalloped potatoes and some good spring veggies.

I have been eyeing a coconut almond cake recipe from Milk Street that I may make for dessert.

Over the years, our menu has developed so many 'must-haves' that it doesn't change much any more, especially with my daughters being grown. They want the 'tradition'. So we will certainly be having deviled eggs, lamb with two peppers which DH will cook on the grill, Crunchy Pea Salad (from Claire in Rescue many, many years ago), and Savoy cake for dessert among other things. The SIL to be loves blueberries, so the second dessert will probably be Charlie's No-Bake Blueberry Cheesecake.

Luckily we all love lamb. It's so expensive now that it almost has to be a holiday meal.

I'll be out of town for Easter but over the years ours was never the same. Sometimes a really lovely seafood casserole or an elegant chicken pot pie with puff pastry or such. Never ham. Sometimes lamb.
