Easy Cabbage Roll Meatball Soup

½ lb - Lean ground beef
½ lb - Ground pork
1 Egg, beaten
¾ cup long grain rice uncooked
1 small sweet onion - minced
2 cloves garlic, minced
1 tsp dried thyme
2 tbsp olive oil
64 oz chicken stock
1 28 oz can diced tomatoes (do not drain)
4 cups Cabbage, shredded
Chopped parsley or chives for garnish

Combine ground beef, pork, egg, rice, onion, garlic and dried thyme. Form into golf ball sized meatballs (approx 20)
Heat oil in dutch oven on medium heat. Add meatballs and cook til evenly browned.
Add all remaining ingredients and bring to boil. Reduce heat and simmer for 20 minute

This is so good and easy. I make it even easier by using frozen meatballs and adding them uncooked and let them poach in the hot soup. I add some rice to the soup when I do that, or leave it out---still good. I also add 1/4 cup of ketchup for a little added flavor. I used some of my "after thanksgiving turkey bones stock" last weekend for a lovely pot of this soup.
