Hi there. I haven't been on in a while but I'm so happy I was able to find my way back and log in. I used to visit the Swap often when my kids were young and I was a stay-at-home mom. Now I'm a teacher and so busy grading and lesson planning that my husband does most of the cooking. I really miss meal planning and recipe research. :)

I wonder if you all could help me. My World Literature students (seniors) want to bring in international dishes to celebrate the end of the semester. I'd like to give them some suggestions for easy dishes that don't require too many or unusual ingredients....also things that can be served from a slow cooker, served room temp, or reheated in the microwave. I've thought of a few things, but I'm running out of ideas. Can you think of any? Doesn't have to be entrees. Snacks, desserts, salads, sides--anything goes. If you think of an idea, I'd welcome it!

Hi therese, welcome back.

Having gained weight over the past month, I've been in salad mode. Not sure if many of your students are vegetarian or vegan, but salads could be one option that would work across the board.

Greek salad (feta on the side)

French: Salad Nicoise (tuna on the side) with baguettes

Middle Eastern: Tabbouleh with pita

Mexican: Black bean and corn (mexican cheese on the side) with tortilla strips

Italian: Caesar (parmesan on the side) or panzanella (mozzarella on the side)

Japanese: sliced cucumbers with fake crab in a sesame sauce (this has a real name, I promise)

(ah, it's sunomono)

That's it for now. My totally unfinished gingerbread house for the library is staring at me and guilt is rising.

These are my go to Italian cookies I make it often.

There’s always chips and salsa or this Fiesta dip

2 cans refried beans

1 can diced green chiles

1-8oz package cream cheese

1-8oz container of sour cream

1 pkg taco seasoning

4 avocados

2 medium tomatoes, diced

juice from 1/2 of a lime

2t garlic salt

2 cups shredded cheese

Green onions (about 1/2 cup when chopped)

1 small can sliced olives

Combine green chiles and beans. Spread in an even layer onto a serving platter or casserole dish.Mix softened cream cheese, sour cream and taco seasoning and spread on top of bean mixture.Smash the avocados, add the lime juice, about 1/4 of the tomatoes and about 2 tsp of garlic salt (or more if you prefer).Spread the avocado mixture on top of the sour cream/cream cheese layer.Sprinkle shredded cheese, remaining tomatoes, green onions and olives. Serve with Tortilla chips.

France......where to start? Brandade, tarte tatin,

oooh I haven't even had breakfast yet.
