Onion Dilly Bread

1 package of yeast

1 C creamed cottage cheese (heated to luke warm)(I used fat free)

1 T sugar (I used 1/2 teasp)

1 T minced onion (I used 1/2 C)

2 teasp dill seed (I used more)

1 teasp onion salt (I didn't have any, used Beau Monde)

1/4 t baking soda

1 egg

2.5 C flour

Dissolve yeast in a little luke warm water with a pinch of sugar. Combine everything, including yeast, in the Cuisinart with the plastic blade. Mix until it forms a ball. Put dough in a greased high sided casserole dish. (I use one of those white Souffle dishes). Let rise in warm place, Knead a bit, form a round ball, re-spray the casserole and put the dough in to rise again to double. Bake at 350 for 40 minutes.

I used to make this frequently and have forgotten about it. Nice to go with the pea soup I made on this cold day when no snow plows have been seen. It makes good toast too.

 
Funny, I just bought the ingredients, planning to make this bread.

I used to make it a lot. So easy to stir up and bake while prepping some soup.

 
No onoly will you need to mix it by hand (and vigorously at that) but probably knead it a bit as >

well. (In the original, the food processor accomplishes that for you.)

You'll also, most likely, need a little more flour (1/4 to 1/2 cup) for that. Just be sure the dough is not TOO sticky (tacky is okay, sticky, not so much)or it won't rise well in the bowl and then, flatten when baked.

I'd also suggest that you use "bread flour",if available, as opposed to "all-purpose" flour. Bread floiur will give you a bread with better structure and crumb.
