Eggplant Lasagna help and questions.

I don't know but I buy frozen eggplant parm from TJ's all the time and it is good, a little softer t

than when it's freshly made at home but good nevertheless.

 
I think it will freeze pretty well

I make eggplant parm and freeze it. I wouldn't say that it becomes watery but it's like typical eggplant - even in the version not cooked, it will be 'soggy'.

And yes, I always salt purge the eggplant first for everything. It just makes for a better finished product in my opinion.

One other thing - I fix a lot of eggplant at a time. I fry it or roast it and then freeze it with waxed paper in between. Then I can throw together something like this quickly. So make the components and freeze them then you can just do it fresh each time. Works great!
