35-40 cookies

Dough

3 egg whites

1/2 tsp. salt

50 g. sugar

2 egg yolks

60 gr. flour

30 gr. cornstarch

1 tsp. baking powder

1 tablespoon egg liqueur

Beat the egg whites and salt to stiff peaks while sprinkling in the sugar a little at a time. Stir in the beaten egg yolks.

Sprinkle the flour and baking powder over the eggs and fold gently in with the egg liqueur.

Place mixture in a pastry bag with 12 mm round tip and pipe out rounds on parchment lined baking sheets.

Bake for 8-10 minutes at 375F.

Remove cookies from baking sheet and cool on racks.

Filling:

80 gr. white chocolate

20 gr. butter

4 cl Eierlikör (4 cl = 1.35256091 US fluid ounces)

Melt chocolate and stir in butter and egg liqueur. Cool. Beat until fluffy.

Spread or pipe the egg liqueur filling onto the bottom ofa cookie, press another cookie on top to seal and spread filling to edge of cookies.

Decoration

100 gr. bittersweet chocolate

1/4 cup ground pistachios

Dip cookies halfway into the melted chocolate, sprinkle with pistachios, set on parchment paper to dry.
