It is still quite good--with a very sharp cheddar. I have made
this recipe and several others, and it is just delicious. I much prefer roasted red pepper to pimentos.
For a great appetizer, spread a baguette slice with bacon jam, top with homemade pimento cheese and run under the broiler.
Because CB's from the South, I've had far more than my share of Pimento Cheese however, I tried a
variation using roasted green chilies (instead of red bells), chopped cilantro, a touch of cumin and a dash of Mexican oregano. Next thing I knew . . . Tex-Mex Pimento Cheese Spread. Boom!
There is a "new" commercial pimento cheese here (and it
may have gone national) started in Charleston--Palmetto brand. They have jalapeno and they have bacon, in addition to "regular". It is truly just about as good as homemade. It has made it's way to Costco, so is also economical if you get it there.
