Enchiladas Suizas -- comfort food at its best!

Creamy enchiladas were an epiphany: heavy cream with a cube of chicken broth to flavor.

That's how simple that version was. I can't even begin to imagine how fabulous this recipe must taste.

These are great comfort food, definitely a recipe for late fall or winter in my part of the country.

Although I have been known to make a pot of chile in the summer or even braising meats....trying to avoid that type of cooking this summer. LOL

S. Fl. did that...well, we'd hardly ever have a lot of things. ;0)

 
And a pot of chli is now a tradition on the 4th of July since we lived

in Jeddah. Every summer so many people (wives and kids) would go home for the summer and it got really dead. For several years John and I would sit outside our units gates on the sidewalk curb and lite our little sparklers...and laugh! After a few years I decided that there were enough people who didn't leave to round up that I had a chili cook-off. We always had at least 50 people and it was a HUGE hit. I even bought a trophy and would engrave the winners name on it and it was theirs for the year and passed on to the next winner. I always made up a huge amount of water balloons and the fun began. It has become one of our best memories and I'm sure there are many who remember also.

 
I know and I suppose that is why I make things that are more winter stuff in summer

it is already 103° here, and I am boiling a big pot of water for raviolis. Ha! Trouble is, our utility bills have become so expensive with the water shortage, we are getting charged for using water over a certain tier. Have to cut back somewhere.

I really do crave winter stuff in summer and visa versa in winter when I crave those wonderful salads made with garden fresh tomatoes and cukes. Crazy, isn't i?. Really am glad we have the four seasons here, even if I get crazy cravings.

 
I hear ya but I've never had 4 season. I was born and raised in Az.

and it was either bitterly cold with ridiculous wind or blazing hot and not a breath of air. Here it's pretty stable. No real horrible one way or the other and some really perfect stuff in the middle. And I'm to old to move anyway. ;0)

 
This is Jacques' favorite dish at our favorite local Mexican eatery. This looks like an authentic

The author of that recipe is Chef Roberto Santibanez. He's from Mexico City and has a handful of NYC

restos. Love his recipes!

 
We have friends who live in Oro Valley just outside of Tuscon, they love it

but complain about not being able to grow much because of the soil. Their house sits on a golf course and they love to sit out on their patio and watch the golfers. She did complain about all sorts of wild critters when she first moved there, but I have not heard her complain lately. It is very hot there too, in summers.
