I remembered that we had two weddings in the family last year. Dina says:
These days they don't have the traditional fruit cake. Each layer is a different cake depending on the bride and groom's tastes. For instance, at Mark's wedding there was a carrot cake, a chocolate cake and the third one, the smallest, was the fruit cake. David had one chocolate cake with white chocolate panels on the outside and a fruit cake. Not all wedding cakes have a fruit cake layer, actually, few have it these days, I believe.
I also only know about a peppermint crisp tart. Perhaps there was a chocolate cake decorated with peppermint crisp and, who knows?, and it might have had a layer of caramel treat (like the condensed milk tins, but caramel inside) which people use to "glue" cakes together. Otherwise, cannot help.
Lana here again: So maybe one could have a chocolate layer, a peppermint or chocolate-peppermint layer and a caramel cake layer?
